I bought it from Ebay so I don't know whether it was upgraded or it had 3.3.1 from the start.
I've tried what you suggested above but I get an Error 20 message. I've googled the problem (before asking the question here) and found various suggestions (use iTunes 8.2 or 7.5 etc.), but nothing worked for me. I cannot downgrade either to 2.2.1 or to 3.0 (I've tried both firmwares)
Yes, I'm aware that there is a jailbreak for 3.0 but, again, I cannot downgrade from 3.3.1 at all (I didn't care if I had to downgrade to 3.0 or to 2.2.1)

As long as you UPGRADED to 3.3.1 than you can downgrade, but if 3.3.1 was already installed when you bought the ipod (Assuming you bought it from Apple/a reseller such as Bestbuy or Futureshop.).
To downgrade,
- First download a copy of the firmware you want to downgrade to, in this case 2.2.1.
- Open iTunes
- Plug in your iPod touch
- Hold down "Shift" and click restore
- Now look for your 2.2.1 firmware and double click on it
Your iPod should be restoring now. Also, there IS a jailbreak available for 3.0 firmware, so downgrading to 2.2.1 isn't necessary.
