I can't sync them from iTunes as itunes indicats the contacts are synced over the air with exchange. If I change the sync contacts setting on the iphone the phone will erase the current contacts. How do I get my contacts from my phone?

Not sure you will be able to pull them off the iPhone since once it has attached the Contacts and Calendar to an Exchange account, it won't move it over to Address Book or iCal. It might be possible if you were to jailbreak it and copy the storage files that keep that info off, but no guarantees.
However, if you had them in Entourage or Outlook already, you could export them out from the local cache.
Worse case scenario, it's time to write them down by hand or copy/paste them individually off the phone. If you're talking hundreds, good luck.
I had the same problem. Thanks to the App Store, I came across a program called "Contacts Master" - The program allows you to upload your contacts to a Gmail account.
Since my primary goal was to replace my old company's Exchange account configuration with my Gmail account, this worked out perfectly (at the time I'm writing this, the iPhone doesn't support multiple Exchange accounts).
The app cost $1.99, well worth it if you ask me (saves the time of having to manually write them down)
NOTE:
Because I'm a little paranoid about giving a third party my Gmail password, after I completed the sync I changed it, just to be safe.
