Whic of the 2 CDs should I use to boot with?
Software Restoer or Software Install?

I have an old G4 that drives a professional A3 Cezzane scanner, and this morning it doesn't want to boot - it just flashes between a picture of a folser with the mac face and a folder with a question mark.
As far as I know this means the system folder can't be found?
I don't want to totally re-install the system because it is highly customised, and the scanner drivers and settings will be a nightmare to re-do.
My boss tried to "Zap it's P-Rams" by holding down a funny combination of keys... but tnothing changed except the monitor resolution decreased. I also tried holding shift to start in safe mode.
I think there are 2 CDS - Software Restore and Software Install. What should I do?

I am not sure. Whatever you do, do not let it do software install or restore. All you want to do is to boot from the CD (by holding down the c key) and access the finder.
While booted from the CD and before you rebless the system folder open Disk First Aid (found in the utilities folder on the CD) and use it to repair your hard drive.
That is bad news indeed. You are going to have to try to locate an older version of a commercial disk repair utility that will run on OS 8 and see if it can repair the drive. I suggest you see if you can find an older version of TechTool: http://www.micromat.com

You may need to re-bless the system folder.
To do this, boot from a bootable CD. Then open the system folder on the hard drive (not the one on the CD) and drag the Finder file to the desktop. Close the System Folder and drag and drop the Finder file onto the CLOSED System folder. This should cause the icon on the system folder to change from the generic folder icon to the special system folder icon.
Then go into the Startup Disk control panel and select the hard drive as the startup disk and restart.
