backup of emails from apple machines and copy it to windows based machine

one of our clients were using apple with mac OS, now all of them have moved to Sbs Srver they are having workstation with OS Microsoft Vista. Users emails stiil exist in ithe apple machines.so they would like to transfer all the emails to their personal acount in windows based new machines.
Means thier emals in thier old apple machine to be transfer in to thier new windows machine.
We need to take backup of thier emails fro apple machines and copy to thier exhannge account.
but i got no idea how we can take backup , and how to transfer to thier microsoft exhange account
i do not have any knowledge about apple machines
so kindly if you can tell me steps in detail to trannsfer emails from mac to windows.
