The websites will be external and not on my LAN. DNS services are not running on the server because I was told just setting the A record pointed to the server of the domain names I want hosted.

Assuming you mean websites,
As you figured out, you 'simply' add other sites to the Web service.
Make sure to point the 'site root' to another folder, so they don't share the same content.
As you may notice, you can make the site respond to All IP's on the server, or a single one.
Make sure to Disable all the OS X Services for the domains not needing them (Wiki, Blog, Calendar...)
