This really depends of what version of acrobat you are using as versions CS1 and CS2 (6 and 7) are not optimized for intel processors and perform rather poorly on Intel based Macs. One of the problems i have expereinced with these versions of acrobat is that if the computer only has 512 or 1 gig of Ram, I am only able to open one Adobe application at the same time. For example if i am using Illustrator CS2 and all of a sudden open Photoshop or acrobat at the same time, it would just crash and not open.
solutions for this include: upgrading Ram on your mac book, getting the lastest release of Adobe acrobat (CS3 or version 8). you can also try this:
create a new user account on your mac and log in with this account.
try to open acrobat in this new account. If it works there might be a problem with your preferences in your other account. hope this helps...

Which version of Acrobat Pro are you using? Have you tried uninstalling and reinstalling?
From what I've read, Acrobat Pro is generally unstable on the Mac, but the crashes usually occur after you start the program ;)
