The Solution Rating System

With so many solutions, how can you tell which solutions are most likely to help you and which ones are not? Because of the way the system is set up, the most important variable in this equation is you. PC and MAC network, and Email Server

My brother owns a business with a small network, and needs my help configuring some new/replacement servers. THis network is about 15 WIndows XP CLients and 15 MAC's (OSX I believe). Currently, he has one Domain Controller (Server 2003 Native Mode) and all PC's are members of that domain. The email server is IPSwitch iMal POP3 server, which every pulls email from. Both servers are on their last legs, and I have been tasked with building him a new setup.

First Problem- Domain Controller: I had planned on getting him a new DC and seizing the roles from his previous domain, one at a time, and then demoting it. Is it possible to seize the PDC Emulator Role as well (never done this scenario before)?

Second Problem- Email Server: Currently, he is using a POP3 email server called iMail which is a member of an independent workgroup (thus allowing MAC's and PC's to pull mail from it). I had hoped to build him a Microsoft Exchange Server, but then realized the MAC's will most likely not be able to connect to that through (only POP3). Is this correct? I would think domain permissions, and the fact that these are Mac's would not allow this. I woulds like all emails to reside in a central location, so that if a workstation fails- emails are not lost.

Can someone please help me to understand- and recommened what I should do in this scenario???
