If you can ping the printer, you should be able to add it from "Print and Fax". Make sure you select TCP/IP printing instead of AppleTalk (although that *may* work as well, depending on your printer and network settings). Before you do that, install the printer's PPD file in Library > Printers > PPDs > Contents > Resources > en.lproj. You can download the PPD file from HP, or use the same one that is used by Windows (it's a text file). Once the Mac "sees" the printer it will look for the PPD and install the printer. If it can't find the PPD, you can manually select it.

I don't know MACs much, but if you can ping the printer's IP address then you must have routing to it. You should be able to map it like you would any local printer (not network printer) and use the IP number instead of the printer name. If the MAC searches for the printer, have it search for the IP address instead of the name. They should be synonymous. I know that it's not much help, but for what it is worth.
