Another method is to create your models and a persistent store (the data file itself) without anything.
Depending on the type of core data model you use (SQLite, XML, etc.) you can then directly manipulate that file. For example, you can do a textual data dump (shows the insert statements) from your current database and then run those against the SQLite instance.
