i just tried this - by removing my Gmail IMAP account from my Entourage install and replacing it with a POP account.
i've set the Exchange server as default.
then, i go into the Inbox from the Exchange server and read as couple of emails.
i select New at the top and have a pulldown at the From: field to choose which server/account it comes from.
i've just read the headers of the sent email and it traversed via the POP server and skipped the Exchange server alltogether.
this also works when replying to a message on the Exchange server - i can reply and then select the sending account as my POP account.
dumb question but - are you running Entourage 2008 Web Services Edition? if not, it's a free patch and might be the difference between what I'm experiencing and what you are.
This is a funky workaround, but - if you can re-setup your Exchange account as an IMAP account instead of an Exchange account, you could configure the outgoing server separate from the incoming server, allowing your Exchange/IMAP email to be replied to from the POP server.
And, if you were to set up a second version of that account using the IMAP server for both incoming and outgoing, you could name it something intuitive so you could still reply from Exchange if you wanted to.

In Entourage, pull down the Entourage menu and select Account Settings. Confirm that the POP account is the one in bold.
When I take my Exchange account that is currently listed as the default on my Mac and swap it with my Gmail account - making the Gmail account bold - new messages are created from the GMail account instead of the Exchange account.
