Restoring backup image to virtual machine

I am looking to be able to restore a backup image of a machine to a virtual machine.  Virtual machine 2004 had the ability to add a virtual disk that was associated with a local disk but that ability was removed in 2007.  Does anyone know how to do this with 2007 or similar?  This is for a disaster recovery scenario until the orignial server can be restored.
