Building a Windows Server 2008 Environment on VPC 2007

I've built a virtual machine with Windows Server 2008.  Now I want to build out 2-3 XP clients that will connect to the VM with Windows Server 2008.

Can someone tell me how to configure the virtual network cards so that the guests see each other and the internet?

I have VPC 2007 installed on an XP SP3 box with 4Gb RAM. ( XP only sees 3.25)

My goal is to do the following:

Configure WSUS to push updates out to the XP client guests.
Configure GPOs to push out Fllashplayer and Java updates (unless you have a better solution).
GPO to lock users out of doing dumb things that will disable their access...like changing the time.

I really would like to  be doing this on SBS 2008, but don't have a 64 bit machine.
