Mysql5 access problem

If anyone would be so kind, Would someone try to explain to me why I can't connect to my mysql5 database as root without using the -skip-grant-tables option.  Below you will see that when I start mysqld_safe with the --skip-grant-option mehod, I can see all the databases, see a password for root on localhost.
