We're having issues where the server will stop responding or become very slow. The memory "looks" ok and the health monitor doesn't show anything abnormal. Once I restart the service all works well again.
Any ideas?

You need to look at the log files and see who is running queries and if any of those queries is especially slow. You may need to throttle access for some people.
