You have to use the properties that are supported by: set_item_instance_property . These include: NAVIGABLE, UPDATE_ALLOWED and VISUAL_ATTRIBUTE. If you want an item instance to be invisible, you can set up a named visual attribute with the foreground (text) and background colors the same, then apply that named visual attribute (along with NAVIGABLE = false) to an item that you want to not be displayed. That makes the content of the item invisible and will prevent the user from changing it.
