You have two issues. One is the build is different. The other is that one or more user mappings did not complete. The build, you can install to have the same as production and then focus on the user mappings.
For user mappings, it sometimes just doesn't find the users. You can just remap each user that shows blank mappings to the same or a different user if you like.
For your situation, you need to first look at which users did not show up. Is it one, several, or all of them?
Next time, just so you know, you can choose to install CRM to the same production domain/forest, and just create a new CRMTEST or similar OU in Active Directory.
Also it is suggested to import the organization and use a different name than the name used in production, although I haven't had any issues using the same name, as long as it is a different server.

Does this server have access to the AD\Domain that the original server is part of?
