Hi,
SAP is not an operating system. It is an application that installs on top of the OS that provides users with tools to manage business transactions, processes and assets. Exactly which ones and how depends on what SAP components you install and require.
Its an Enterprise Resource Planning (ERP) suite that can be very complex or simple depending on your needs. It is very customizable and can scale to very large deployments.
