It doesn't matter what program you use to create the ISO file. Personally, I would use CD Burner XP (Freeware) and create a CD Burner Project with the desired MP3 files and use that to repeatedly burn the CD whenever you want.
You could also use Windows Media Player.
The reason why I would use the above two methods is that you have an option to verify the burn using them. When you burn an ISO file, you normally can't verify the burn.

if it is MP3 CD then the file system must be CDFS.
UDF is not compatible standalone players, as far as my information goes.
