With so many solutions, how can you tell which solutions are most likely to help you and which ones are not? Video Quality reduced with non-factory cables

We have a Samsung 8 camera video system. It comes with 4 x 60 6 pin shielded cables Model MCB-60. Connections are RJ11.
recently we made extra cables with Cat 5e cable and Cat 5e shielded cable. (Shielding didnt make any difference.)
Viewing 8 small pictures on the 21 CRT monitor pictures are fine. Viewing individual cameras on full screen picture quality is greatly reduced with the homemade cable.

any idea's on what would be causing the substantial reduction in quality?  new cables are only about 20-30 feet longer
