Because split screen in racing required drawing the entire scenery twice, something that would bring the game speed to a crawl if it was already pushing existing hardware to the limit (which game developers try to do). You won't find many games that have the feature--certainly not recent ones. Nonetheless, here's what I could dig up for games released since 2000:
