Go to Settings/Game Settings in the PS3 where you can force the video resolution by only allowing the console to choose from options you allow (i.e. untick 1080p/i) The PS3 has an intelligent resolution selection so it looks at the game you have chosen and decides on the best output resolution based on the choices you provide in settings. Not sure if you can simply do this on your friends monitor with a 720 game installed or if you need to put it back on a HD screen first. Because you have selected HDMI the PS3 is pushing the best options automatically. It's getting no feedback from the display so it doesn't know its output is unusable.

Try this:
If the video output settings do not match those required for the TV in use, the screen may go blank when the resolution is changed. The screen should, however, automatically go back to its original resolution after a while. If the screen remains blank for more than 30 seconds, turn off the system. Then touch the power button on the system front for at least five seconds to turn the system on again. The video output settings will automatically be reset to the standard resolution.
