How do you determine/translate the processor type from System Information

How can you figure out what the processor type is from this bit of information from System Information

Processor      x86 Family 6 Model 23 Stepping 6 GenuineIntel ~2660 Mhz

Is there a table that tells me what model 23 is? and Stepping 6, and Family 6? The rest of it is easy to figure out.

My ulitmate goal is to determine remotely what kind of CPU is on this particular WS/Server (Single/Dual/Quad core)
