Computer powers down shortly after running 3-D graphic intensive programs

The problem: When running a 3-D Graphics intensive app (i.e. 3D Mark 2006 Demo) the computer suddenly completely shuts down, 1-3 minutes into running the app.

My system:
Intel Core 2 Duo E6600
2 GB DDR 2 Kingston RAM
Gigabyte N680SLI-DQ6 Motherboard
Hiper 730W PSU (SLI Compliant)
2 * Seagate 3Gbps SATA Drives
Antec 900 case
Point of View 8800GTX NVIDIA card
OS: Windows Vista Home Premium

I've just built this PC. The system POSTs and Boots with no problems, and runs Windows Vista (Home Premium) edition with the latest drivers. It scores 5.3 on the Vista experience test. The problem occurs when I run any 3d intensive game or application. For example if I run the demo of 3D Mark 2006 (free edition) the demo will run for 1-3 minutes before the entire system suddenly powers off. I have detected no other issues with the power supply, and it is rated to be capable of running two GTX 8800s simultaneously.

I've checked all cables in the case, reseated the Graphics card, unplugged and replugged all power cables, ensured that I had the necessary 2 12V cables running into the 8800GTX and checked that all of the fans work. I've noted the following:

1 - When the computer powers up the CPU heatsink fan spins for approx 10 seconds and then stops.
2 - After the computer crashes the CPU heatsink is cool to the touch, even though the CPU fan has stopped spinning (the Antec case has a 20cm fan just above the processor which probably explains why it's so cool)
3 - The graphics card is hot to the touch, however its cooling fan seems to work fine.
4 - The PSU is not hot to the touch (a little warm maybe) and it's fan isn't blowing out hot or warm air when it operates.

Currently I'm trying to work out if the PSU is faulty, the CPU is overheating somehow or the graphics card is faulty (knackered heatsink?). The first stage of that I guess is to run software that will somehow diagnose my hardware (check PSU voltage/current levels, track CPU & GPU heat over time that sort of thing).

Does any have any software recommendations to help me do that? I'd prefer freeware if possible but don't mind paying up to £20 ($40) if the software is damn good.

Alternatively has anyone had this problem before? Is there a simple fix I'm not seeing? At the moment I'm resigned  to RMAing the graphics card or the PSU, is that the right course of action?
