Graphics Card and Hard Drive Questions for New PC Purchase

I am purchasing a new HP Pavilion Elite e9150t desktop and after speaking with 4 different sales support people over 1 week, I'm amazed at how many contradictions I get on "facts."

Therefore, I'd like to get a real expert's opinion on some simple stuff, actually. The first is on graphics cards. http://www.shopping.hp.com/webapp/shopping/popups/moreInfo.jsp?category=GRAPHICS_CARD&catUid=m_c_4 shows the 4 choices available.

I have 2 monitors and want both to be connected at the same time. Also, the wording in the descriptions indicate the one that comes with for no additional price has "graphics memory" while the 3 others have "dedicated video memory." What the heck does that mean and what impact would it have (I don't play games, watch TV or movies on my PC; but do a lot of photography related tasks with Photoshop).

2nd question is with Hard Drives...

For the same $, I can get either:

1TB RAID 0 (2 x 500GB SATA HDDs) or two 750GB drives. All drives are 7200 rpm. My confusion lies in performance. HP indicates that the RAID 0 pair of 500GB drives has the PC determine where data goes, so maximum performance/speed is achieved.

I had planned all along to put the OS and all programs on 1 drive with all data on the other (I have 1.75TB external worth of drives for backups). What is your opinion on which set up would be best?

I like the concept of the RAID, however, then the programs and data would be mixed on both drives and when/if 1 fails, it would be more difficult to replace the data on a new drive. Is there performance improvement with the programs vs data idea of mine?
