The basic process you need to follow is this ...
(1) Image your XP partition [Preferably to another drive (internal or external); but it can also be to another partition on the same drive]
(2) Delete the XP partition [This frees up the space at the start of the drive.]
(3) "Slide" the Windows 7 partition to the beginning of the disk (this assumes the Win7 partition is immediately after the XP partition ==> if that's not the case, I'd suggest a slightly different process)
(4) Restore the XP partition to the free space after the Windows 7 partition -- which will be exactly equal to the size of the XP partition.
Done :-)
The specifics with Boot-It are very straightforward -- if that's the program you're going to use let me know and I'll walk you through it.
Also, if there are intervening partitions between XP and Windows 7, the process is a bit different. In that case, the simplest approach is to image both OS's; delete them both; then slide the other partition where you want it; and then restore the two OS partitions.
