Do I need seperate cards if so which ones, and do I need any more power - I have 4GB of RAM.
quad core 6600 processor and plenty of hard drive space.
also how would it work? I have two monitors connected at the moment and the start bar stays at the left and any windows I want to open on the right I just drag accross, would it work the same?

yes.
additionally, with UltraMon, you can have a rudimentary taskbar in all the monitors, or selectivey in certain monitors.
i am speaking from personal experience - i have a dual LCD display setup, with a third CRT display brough online on demand.
As Callandor noted, there is native support in Windows for up to ten monitors. Ultramon adds a few management features, but unless you need/want those features you simply don't need it.
One caveat: If you're running XP you can freely add additional video cards until you have support for the six monitors you want (basically you simply need 3 dual-output cards). But if you're running Vista ALL cards must use the same unified driver -- doesn't mean the cards have to be identical, but they must use the same driver. So be sure you check the drivers for whatever cards you want to purchase to be sure they're the same as your primary card.

multiple USB monitors and UltraMon
if you have multiple (as in 3 or more) PCI express slots, you can install multiple dual or triple head cards - and put in standard monitors with D-sub VGA or DVI connectors
an example of a cheap dual head card is the nvidia 9500GT
for low level to moderate graphics the 9500GT is good enough.
UltraMon would help you to manage the monitors - alignment, position, calibration, resolution, etc.
in this setup, you will not be able to use the benefits of SLI or crossfire, though.
