Backup Solution for 10GB OS, Progs & Data

Hi

I'm looking for a method of getting offsite backups of everything on our Windows 2000 Office Server (<10GB) so that we can guarantee a full restore of everything if the building burns down.

We were using a Seagate STT20000A Tape drive but it needs repairing and we don't have any usable tapes left. It could therefore cost a bit to go back to this method.

I'm wondering if using an external hard drive would be an option. Either ghosting copies of the server to it during the day or backing up to a workstation overnight and copying the backup file to the hard drive during the day. We have Veritas Backup Exec 8.6 but we'd have to buy Norton Ghost or some equivalent for the ghosting option.

Are these acceptably safe options or can someone experienced in backups suggest something else?
