Server Hardware Advice Please....

Hi all,

I have purchased an empty 2u case for running some game engines on and need some advice on the best mb / processor to put in it.

I would like to run multiple copies of the quake3 server engine. How many, I am not yet sure of. I guess that somewhat depends on the hardware.
Am not looking to spend fortunes, but I noticed that AMD XP MP 2800 have come down a fair bit now. Would this be a good option?

I would prefer to run win 2k3 on the machine, but am open to suggestions if you think linux would be a much better solution. Although I know next to nothing about it. So really would like to stick to a OS I understand. Will windows make proper use of both chips?

So my questions really are, AMD Multiprocessor Yes or No? Any particular MB to use for these? Is the MP a waste of money? Should I just aim for 3200 XP or 64bit? Or look into Intel?
Any other suggestions / tips for hardware would be very welcome.
