Would this system be considered a good gaming system for all the latest PC games?  If not, what would you do differently?

Looks fine - my own current recs are i7's with 6GB on either V64 or W7-64 :)

The main limiters are now Graphics cards - which you have covered - SATA drive speed - ditto - I'd stick with Corsair for the RAM (I'm using Dominator) & A good PSU
After that it's little things like quiet fans and lots of front ports for gaming comms/skypeing headset & pick up a decent KB & mouse (Lachesis ??).  
Forget about cathodes and other pretties - make it functional!

absolutely great. of course you could add another couple of graphics cards and run 2 in SLI mode and the third as a physX.

quite a nice config.

but you may want to have a look at the P6 series of Asus motherboards, specifically at the P6T DV2, and the Rampage 2E.
just a thought.

fort RAM, if you can go for PC1600, much better.
