The problem is that the DNS server it assigns the PPTP clients is the router, so the clients are not able to resolve equipment on the network. Is there any way for me to configure the RV042's PPTP server to assign a DNS server that is not itself?

Not on the linksys itself, but you can change the pptp connection settnigs in the OS to statically assign the proper DNS servers.
