With so many solutions, how can you tell which solutions are most likely to help you and which ones are not? Need help with setting up Subnets and VLANs

Our network has been growing rapidly and we are about to deploy a VOIP phone system so I would like to segment the network and setup VLANS for the voice & data. We have a single HP ProCurve 2824 as the core switch, 3 ProCurve 2650s and a 2626 for edge switches. The edge switches connect back to the 2824 using fiber. Everything is currently on a 192.168.0.0/24 network but I would like to place servers, printers, desktops, and phones on different subnets and separate them using VLANS. I have tried to read up on VLANs as much as possible but I still need some guidance. Your help is greatly appreciated!
