Because of the way the system is set up, the most important variable in this equation is you. Need step by step directions to create vlans on existing flat network

I currently have a huge flat network.  172.16.x.x /255.255.0.0.  my gateway is 172.16.0.254.  dhcp (from a server 2003 box) currently hands out 172.16.100.1 - 172.16.102.255.  I do not have any experience with managed switches.  I am trying to figure out how to configure our catalyst 2960g to support vlans. It has 24 ports.  I also have many hp procurve managed switches that are capable of vlans that my end users connect to, i just have no idea how to configure them.  To start, I would like to accomplish seperating the different departments in my organization.  lets say dept a = 172.16.100.0 / 255.255.255.0, dept b = 172.16.101.0 / 255.255.255.0 and dept c = 172.16.102.0 / 255.255.255.0.  all of my servers are on 172.16.0.0 / 255.255.255.0, im not sure if that would have to be another vlan.  I'd like none of the departments to be able to talk to one another.  i guess i'll let all of the vlans access our servers to keep things as simple as possible for now.  Please keep in mind that i am a newbie when it comes to managed switches.  one plus is im not afraid of cli, i currently manage a pix 515 via the command line.  Any step by step directions would be GREATLY appreciated.  please dont make any assumptions of common knowledge when it comes to managed switches.  ive seen lots of other refrences to vtp, i have no idea what that is.  The other main thing id like to accomplish but i dont know how it will work is still using my server 2003 dhcp server.  It currently hands out the lease i refrenced above.  how will end users pc's know what address to lease?  Thank you so much.  I really appreciate it.
