how to set up vlans and routing on cisco catalyst 6513

Hi, i need to set up multiple vlan for my company. I want, for instance,to separate clients traffic (PC, SERVER,printer ecc. ecc.) from VOIP traffic, i want to create a vlan for wireless clients also, and shortly i'll need to create multiple vlan for each branch and sector in my company. Actually we have a 6513 with this version :

Surely the ios need to be updated, but i don't know how to do this(TFTP way?), and if i'll loose all my configuration (very poor but i have some).
Anyway, the problem is that i have no idea how to route the traffic between the vlans, i have no routers yet, but someone told me that the 6513 have routing capabilities because it's a layer 3 switch. I Have already created 3 vlans, i have already configured all our fully cisco network switches in trunk mode 802.1q, vtp V2, and all switch in client mode, except the 6513, and i can "see" all created vlans avalaible in every switch ports. So now i need to create some routes to manage the traffic between this vlans. I tryed with access-list command, but seems that it doesn't exist in my os version. I know that my questions are really "stranges" and i know also that my level is less then ROOKIE, but i need at least some info to try to solve my questions.
Please let me know which details you need to help me more effectively. thank you in advance.
