Configure Raid 5 after Raid 1 is configured

I have Dell Poweredge 2950 server with (5x146GB) HDD.  I configured the dirve 0 &1 as a mirror (RAID 1) and would like to configure the last 3 drives as RAID 5 but can't seem to do so.  There are two controllers - controller 0 has four disk and controller 1 has 1 disk.  

I simply need to configure the last 3 drives as RAID 5 but have no clue how to do such since I have already installed the OS (Srv2K3) on the first two drives.  Using the software appears to want to erase all the drives even tho I select the 3 drives to configure the RAID 5.  I have attempted ctrl M and ctrl A on startup which would generally allow me to configure the other RAID but it only boots to the OS.

I am hoping someone will be able to assist.  Also, is there any documentation on which raid configuration is best for what type of data....say exchange/databases; file server, etc.
