Best way to share data between two PCs without exposing one to the Internet?

Please help us decide what the best way would be to allow two computers ina three computer workgroup to share data without exposing one of them to the Internet. The customer is a CPA who lives in terror of being hacked. They want to do email and Internet on two machines and keep customer data on a third. They would also like to keep the data machine severed from the net, but, able to read and write data to the owner's machine.

Can we add a new PCI NIC to the two machines and use a crossover cable? Would a USB cable be best between the two machines? Is there some simple and elegant proceedure we are missing?
