Folder password protection

One of our offices has a peer to peer network, with one computer designated as the "server." A lot of people come in and out of the office and they want to password protect some folders. Most of the systems on the network are XP Pro, though there is still two Win 2000 systems. What is the best way to protect (with a password) individual folders?
