Don't need a consultant. You must have offered something that made them decide to do business with you. Could be your prices, experience or just the right person and the right time.
I don't think you necessarly even need to write a thank you note, they probably could care less. Show them your appreciation by doing a good job and charging reasonable prices. If this is one of those hey we will call you, we promise and no appointment has been set then follow up with something like this:
Dear <name>,
It was a pleasure meeting with you <the other day - last week - etc> and I look forward to helping your business with your <I would assume technology needs>. I would like to schedule an appointment to assess your current system enviroment and then sit down with you to discuss my findings and recommendations.
Again, thank you for your time and I look forward to meeting with you soon.

Make them feel that their business is your business. When they succeed then in return you succeed.
