Exchange 2003 SMTP virtual server stops responding

Has anyone had this issue?
We are running server 2003 R2 sp1 with exchange 2003 sp2. We are also running trend micro's officescan and scan mail on this server. The information is located on a san in the same rack and we haven't had many issues with it. Unfortunately it also has IE7 as well. My problem is the SMTP virtual server stops responding after about 5 or 6 days. There is nothing in the event viewer and non of the services fail. We just notice that the mail can be sent from outlook but doesn't show up in the queue and doesn't leave the domain. I quit reboot usually aways fixes the problem, but rebooting is not always convient.
