'Mailto' or 'from' won't send as my domain email address (sends as service providor email address)

Hi There,
I have tried everything possible to ensure that when I REPLY to an email that I receive, my email address@domain.com is used as the 'mailto'. For some reason tho, no matter what I do it keeps coming up as address@myserviceprovider.com.au. Eg;

Want 'From' field so say: 'Jennifer [jennifer@mydomain.com]'   but it comes up as;
Jennifer  '[jennyv@myserviceprovider.com]'

When I send a NEW message is comes up as 'Jennifer [jennifer@mydomain.com]'...it's just on the replys that it's not working.

Please help!
