The Solution Rating System

With so many solutions, how can you tell which solutions are most likely to help you and which ones are not? To provide you with a tool to use, we rate our solutions based on various elements that most accurately determine if a solution is a quality solution. Because of the way the system is set up, the most important variable in this equation is you. Exchange Server - Best Practices \ Virtualization

We are looking into virtualizing some servers to better utilize our resources.  I want to get some feedback on virtualizing Exchange Server.  I know that when you get to a certain amount of users you want to start balancing the disk i/o. (ex: having your datastores and logs on a seperate array to balance the read\write operations - Correct me if I am wrong.).

1. At what point or how many users have to be using exchange before we start looking at optimizing disk read/write operations.
2. I am not an expert when it comes to virtualization software, but how would you configure exchange for a large organization using virtual machines?  It seems a bit restrictive and less scalable than installing and configuring exchange right on the server itself (not in a VM).

I'm glad to look at some other resources to learn more about this if anyone has any.
