Sharepoint backup and Recovery

I know this has been covered in countless articles and forums, but i would like to know the best way to Backup Sharepoint 2.0.

Basically, I never played around with Sharepoint and currently trying to wrap my head around it. We had a guy that took care of the sharepoint config and he setup the backups. But he was fired for several reasons. We never had to do a restore, nor did we ever do a test restore (from what i know).  I just want to make sure he setup something that will work.

He has a batch file that points the backup to another server and also points to STSAdm.exe. It then creates lettered backups (A-N) on the destination drive. The batch file runs twice, daily.

Does anyone have experience with restoring using stsadm.exe? Or any suggestions would be great.
