varchar not big enough?

I have a web application that contains a field that is used to hold a list of all users that a specific e-mail was sent to. I have the field is currently a varchar of 8000 but its not going to be big enough, as more time passes the list of users e-mail is getting bigger...so I need to update/convert and change my application...which field should I use, and how do I go about updating my current proc.
