Apart from the normal Severity 17 through Severity 25 alerts configured, what other alerts are a good idea to create?

Huge topic and you're going to get disagreement from almost everyone. Best approach is to start with simple, basic counters and expand from there as you have done ...  ie SQL Alerts 11- 25 as standard ..
Then you can create you own custom alerts to suite you system you monitor ie Deadlocks, Disk Space, long running jobs etc ....
