Custom menu in access 2007

I have a .mdb database created in microsoft access 2003.
In this database, I have created a main menu and some shortcut menus.
I've managed to hide the default database menu and toolbars  and show my
custom menu and toolbars(through the onopen event of a switchboard).

Everything works perfectly. Even now that I have upgraded to access 2007.
Access 2007 is smart enough to hide its default ribbons and show
the menu and toolbars on startup of the .mdb database.

But for some reasons, I need to add/remove some items of this custom menubar.
I'm not able to install access 2003 once again to do the necessary changes.

now this is where you can help me by answering some of these questions:

1- is it possible to use 2007 version to modify menu and toolbars of a mdb file created in 2003 version?
if yes, how?   If No, what are my choices?
2- Is it possible to create a custom menubar and toolbars in 2007, hide the ribbon and show this
custom toolbar/menubar on each startup?


I've seen some documents on office.com that explains how to create a custom shortcut menu
by macros, but none of them explains how to create a main menubar and toolbars.
