I am trying to append information into a sql server table from access and need to find a way to import text into a image field in the sql server database

That will convert the text documents to Images.
How you load them into your SQL table is another issue entirely.

You want to store ASCII text (characters) in an Image field?
So an Image control will be holding nothing more than ASCII character data? (There must be an option for a varChar column for you to use - no? Can't you add a table if you can't alter the existing ones?)
Pretty simple to achieve though. You just do it. A binary column can store ASCII data as it's just very simple binary data.
(You do know that the Image name of the field type doesn't imply anything about the contents of the field data yes? It implies the binary nature of the storage. Hence inserting text into it wouldn't requite that it's first been converted into an image at all).
Or do you hope to actually create an image - which is actually text? (Which is what it sounds like).
Because you intend to then use that as an actual image somewhere?
You'd have to create the image and then insert it.

Create the image and then insert that binary data into the column.
Well, the loading itself is the relatively easy part. :-)
If you want to use the images directly in Access only (say for signatures or Form logos etc - unlikely I know) then saving the PictureData is all you need. But that image data isn't useful externally.
Saving the image to disk and then inserting that data into the Image column is just standard BLOB stuff. But you have to extract that file back to disk before you can use it.

Can you explain exactly what you are trying to accomplish?
Image fields tend to be Binary, not textual.
If your data is text, why would you want to append it to an image field?
