In your database, click on the office jewel (What used to be the file menu) and press the "Access Options" button at the very bottom of the new menu. Select 'Current Database' from the list on the left, and this is the menu where you can control the toolbars and startup options. You're probably looking to uncheck the "Allow Full Menus", "Allow Default Shortcut Menus", and "Display Navigation Pane" boxes.
The only ribbon tab you can't get rid of is the "Home" tab.
