I need to have each of these servers show up with a separate public IP for any outbound traffic.
They are now all showing up as from the main IP bound to the ISA server. How do I make this happen? The NAT rules I'm used to from the other firewalls I've used don't seem to exist.

Can't be done if you are using NAT translation on the ISA. All traffic will leave using the MAIN ip address bound on the ISA external nic.
if it is a MUST HAVE, then you need to switch off NAT on the ISA by changing the relationship between the internal and external nics from NAT to ROUTE (ISA gui - configuration - networks - network rules) and let the external device provide the NAT functions instead.
