Transfer of website domain name with custom MX records.

Hi.  I would like someone to help me with this query...

I have a website (e.g. mydomain.com) that is hosted with a webhost (e.g. webhost1.com) but has a custom MX record pointing to the mail server (exchange) in my office.  I want to transfer the domain (mydomain.com) from webhost1.com to my new webhost (e.g. webhost2.com).  As I understand it when I make the transfer of the domain the to the new host the new host will set the E-Mail MX records to the default ones it has (i.e. it wont copy the custom MX record across) is that right?  If so do I have to wait until the domain is in my control with the new host (webhost2.com) before I can update the MX record to the custom one which I had setup with the old host? Is it possible to create an MX record on my new host before I make the transfer so that as soon as the transfer is complete the MX record will work and I will receive my e-mail?

Basically the main question is.  Can I make this domain transfer without any downtime? Propagation etc? If not how much realistically am I looking at?
