Modifying MX Record - How long to update

My domain is hosted with GoDaddy.  I would like to change the MX Record to point to a different email server, but keep the website the same.  Once I change MX Record, how long will it take before I receive email at the new server?  I have heard that redirecting where a website is pointed takes between 24 and 72hrs.  If I am just redirecting the email, does the change take affect immediately?

Thanks! Where do the emails go during that 24hrs after changing the MX Record?

They should be still sent to the old ip until the mx gets updated. If the old ip does not exist some email servers will fail the email which is being sent so the user will have to resend. Some mail servers will put the mail into a que and kepp trying to send for a set amount of time.

DNS propogation takes up to 24 hours, but is often quicker, and expecially locally.
You may have multiple MX records (check with nslookup, and set q=mx then look up yourdomain.com to see). If so, the other servers (normally the ISP's) will store and forward your messages to your new server address when it's available.
If not the scenario welmore describes will pertain
