I am afraid I do not know the specs of your epson, but we have shared a colourjet using a USB hub and two usb cables, one to a mac os x 10.3 and one to a machine running XP pro. The other option is to use file and print sharing from your windows machine and Mac os 10.3 will share the printer over the network, conversely you could enable file and print sharing on the apple mac, if you have the firewall enabled on mac os x you will need to enable file and print through this or as kode99 says a cheap hardware based print server will enable you to do this via tcp/ip.

There are lots around some are expensive, often cheaper to get a router/hub with print server built in.
The reason I got it was I was tired of the printer being unavailable because somebody shut the PC off so the print sharing was a pain vs a hardware solution that 'just works' with no crap involved.
